At San Michele all’Arco all dishes are prepared mostly using products from our farm San Michele a Torri, organic since 1993.
The cured meats and pork meat used in our dishes are from our CINTA SENESE porks, raised in our farm in a semi-wild state and fed with simple cereals such as barley, corn and field beans.
On the table we serve our organic extra-virgin olive oil “Laudemio” produced from our Frantoio, Moraiolo and Leccino olives. Our fresh pasta as well, plain or stuffed, is a product of our Laboratorio Artigianale located in Via dei Rustici 6/r in Florence. Durum wheat fresh pasta is prepared by using artfully restored antique machines according to the traditional compression method. You can also taste many others of our products such as: our bread, made with organic flour, our honey, our small chickpeas of Chianti, our eggs from free-range hens, along with seasonal products from the garden: ribbed florentine tomatoes, zucchini, salads, peppers, eggplants, cucumbers, green beans, Savoy cabbage, broccoli, fennels, leeks, yellow pumpkins and many others…The choice of serving fresh and mostly home-made products allows us to vary our menu quite often (nearly on a daily basis) and to offer high quality combining the excellence of raw ingredients with our chefs’ creativity.
The seasonal menu below is only one example of what you’ll be able to enjoy. Salami and cheese from the farm are always available and so are all products from the garden, served in their own freshness to avoid the alteration of organoleptic properties.
