SAN GIOVANNI NOVANTASETTE RISERVA
Chianti Colli Fiorentini Docg
This reserve was born in a single vineyard on only 2 hectares of Sangiovese. Our intention is to get a well-structured wine that keeps the fruity notes of the typical Sangiovese over time. Thispeculiar terroir gives these grapes, and consequently the wine, a wonderful softness and surprising freshness.
VINES
The grape used is Sangiovese (100%).
SOIL
The soil is semi soft with tendencies of clay. Because it is a skeletal-rich soil, it is
considered on average, fertile.
TRAINING
The training method used is the cordon with a planting density of 5,000 vines per
hectare.
HARVEST
The harvest is done manually, usually around September 25th.
SOAKING AND FERMENTATION
The fermentation takes place in a 28/30 degree celsius steel container for a period of 15 days.
AGING
The wine is then aged in barrels of 25Hl for a period of 9-12 months. This step does not interfere with the aromatic wood of the Sangiovese, but rather enhances the fruity taste.
APPEARANCE
Ruby red, dense and consistent.
AROMA
Intense and persistent with floral, fruity and spicy notes.
TASTE
Warm, soft and fruity; tannic and pleasantly acidic.
CONSIDERATIONS
A balanced wine best consumed within 4-6 after harvest.
PAIRINGS
Chianti Colli Fiorentiti DOCG Riserva “San Giovanni Novantasette” is suitable for all
meat dishes. It is excellent with the typical Florentine steak and other grilled meats. However, in our mind it is paired best with typical Tuscan stews such as “peposo” where the scent of the wine integrates with the aromatic gravy where the tannins contrast with the fatty flavor of the meat.
